Pork chops with creamy,cheesy spinach served with Halloumi chips
What you need:
- Pork chops with bone(bone optional)
- Baby spinach
- Halloumi cheese
- Extra thick double cream(1 Tbsp per portion)
- Creme cheese(1 Tbsp per portion)
- Small red onion(half per portion)
- Black pepper or mixed
- Dijon mustard
- Garlic(can be garlic powder) fresh is better
- Olive oil
Tender the pork chops a little then salt, pepper and Dijon mustard on both sides. Leave them sit for 20 minutes. In a large pan put olive oil heat it up and add grated garlic(if fresh is used) let it caramelised and add finely chopped onion and let it caramelised too(couple of minutes should be just fine). Add baby spinach and cook until all the leaves get dark green and soft. Take it of the heat and let cool for a minute then add extra thick cream and put it back on low heat add the creme cheese and stir all ingredients until well combined. Give it another couple of minutes on low heat, add more seasoning to taste.
Now, heat a separate pan with olive oil and fry your pork chops till they are brown and well done around the bone. Let them rest few minutes.
Halloumi cheese chips: Just cut the cheese in to chips shape and fry them in a pan with olive oil till brown(you will need to turning them often and quickly) or you will burn them. If you like You can season them with smoked paprika or some herbs for better taste.
